Arcanum does a lot of that bullshit "Unarmed combat drains your fatigue" as a way of making it doable. Like, actually I would rather not be cheesed to death by a boxer, I had enough of that in Morrowind.
Prioritize combat first basically and don't roll a gun, bow or throwing character on your first go. Go magic and get Harm or go melee and get Melee and Dodge as soon as possible along with their stats to an appropriate level.
Also don't feel bad about savescumming a lot when traveling.
You get your first companion at the crash, 2nd down in the inn in first city, third over in Tarant then if you hop on down to Cumbra to the south you can get a fourth which can craft healing for you
And then you can go to the east to Ashbury and quickly run up to a dog who's about to be kicked to death, save it and get a free party member that doesn't take up a slot.
