Probably ME 3. Not totally sure, but i've heard ME 2 was Ok. fallout lore was already messed by fo3. There wasn't much left to destroy. GOT lore was already messed by S5, S6 and S7. There wasn't any expectation left.

You might want to check what Wasteland Merc 2, Last Hope and Global Mod did with hunger.

I have yet to play any of them, but i LOVE the concept of time moving on and having consequences regardless of you doing actions or not. Should provide ton of replayability.

I had hoped that Marcus would do Broken Hills on a bigger scale. There ought to be some progress on racial issues.

It is irrelevant to compare anything than happens post-season 5 with the books. (and even 5 had a lot of major differences, but at least it seemed they were still trying)

Fallout - New California seems to be the most ambitious, but i didn't try any.

The showrunner had lost interest in their own show since the latter half of season 5. I had zero expectation from season 8. That being said, the first half of season 8 was so boringly predictable, that the twist with Daenerys was refreshing. At least something was happening.
