Final Fantasy VIII (possibly the best gaming score ever written)
I really agree with CC on M:TW (especially the battles in the desert! Arabian medieval music r0xx0rz!). Also Baldur's gate 2. I know you hate Interplay, and so so I, but you can dload BG2 and Fallout music from their site, so... http://www.interplay.com/interact/downloadlist.asp?Dltype=1
But anyway, haven't bought HoD yet, but I've read the music is good.
Dunno about FF8. There's another FF game, don't remember which one (it had a medieval setting of some kind and had more or less 3D graphics) with great music. Not to mention the music in Chrono cross.
Heroes of Might and Magic 2 and 3 had to have one of the best music in a PC game...
It is amazing how they managed to match the mood of each type of town with a classical song. Simply amazing.
Of course there is also GTA: VC's V-ROCK station, mwahahaha

I forgot about Unreal. Damn good. BTW does anyone know how to get that music in some format that allows to listen it some other way than when playing the game?
You'd most likely have to get a converter, like with the Fallout music. Other times, games will have the music files in straight mp3 formats, like in Heros of Might and Magic. Other times, you'll have to get an extractor cause all the music files are compiled together into one big file.
Vice City, hands down. I love the soundtrack set to death, and I love the commercials, especially the Petstuffers ad and the movie ads.
Some of the music in Sega's racing games (Daytona USA 1 and 2, Super GT, NASCAR Arcade) is catchy in a J-Pop kind of way. And the J-Pop in Initial D: Arcade Stage is great as well: actual music from the anime soundtracks is a smart move.
monkey island 2 - great melodies, just awesome
dune 2 - however i do hate the movie soundtrack that Toto did
doom 1,2 - well suited for the aggressive and spooky gameplay
warlords 2 - the music just sticks to your mind
zelda 2
castlevania 1, 2, 3
bionic commando - this game has very nice music
when it comes to the NES games i can recommend the winamp plug-in (NotSo Fatso) that play the NES music formats NSF & NSFE
