Well, hi everyone!
I am writting this post because as we all know, New Vegas (Also FO3 and TES4, damn engine, but specially NV) has a lot of issues and crashes on its own. I remember playing it when it came out and I had no big issues (And I played the PS3 version, assumed the WORST port).
The engine is flappy on its own, and it appears that technology innovations, such as drivers, multi cores and paralelism, break it big. So, as there is not a definitive sollution, I will tell you what I did to minimize the crashes, though I couldn't remove them completelly.
The idea is to keep this post updated when some of you find more troubleshot or has anything to add here. There is a lot of troubleshot around but I found not a central place or a guide for all stuff, so maybe this post can become that sort of guide.
First of all, I am using the Steam version with All-DLCs on Win10. And you will need some mods to minimize the problems, so use the suite of your choice:
>NVSE http://nvse.silverlock.org/
>NMM http://www.nexusmods.com/skyrim/mods/modmanager/?
>FMM http://www.nexusmods.com/newvegas/mods/36901/?
It is recommended at this point that you validate your install of New Vegas via Steam. This will repair and redownload all missing files, or corrupted ones. At first run, it may (or may not, this is how it is haha) run if you are lucky, but I have seen odd errors coming from there.
Here is how:
Next step is critical (or appears to be) on multiple core CPUs. They sold it to me as "The mega fix", it is obviously not, but it appears that multithreading is a heavy issue here. I have tested using 1,2 and even 4, and I didn't notice the difference on my own environment, but I have read tons of comments and people this save their life. Its important after doing this, not validate Steam again, or changes will be lost. Also if you make a mistake, you can delete the file and revalidate, and it will create it for you.

With all these steps I was okay at first, but then came a driver update on my videocard and everything got broken. The classic "Fallout new vegas stopped working" when loading a savegame was increased to 100% of its own probability, so I had to dig a bit into and got here:

It is important you don't download this file with your mod manager, and you get the BETA VERSION manually. Don't worry about integration with other mods, Mod Managers are only an interface for NVSE, so put the nvac.dll file on $GAME_DIRECTORY/Data/NVSE/Plugins, and you are done.
This step should fix the annoying "Fallout new vegas stopped working".
Then there is an strange phenomenum known as BSD - Black Screen of Death. There is not too common, but I got the problem after using NVAC. Entering a place may cause the screen go black, and the game keeps running (sound coming out from speakers, working keyboard and mouse). This problem got me in a very bad mood and almost give up, but it appears the sollution is this:

After installing 4GBNV, run allways the game through the 4GBNV executable, it got rid of the BSD issues.
Then further problems can appear depends on the mods you are using. You can use every mod you want, but pay attention to the order of loading if you are using a lot. Every mod has a compatibility section where the order should be explained. FMM can configure the load order, so if you are still getting strong problems at this point, I'd recommend using FMM and go that way.
After all this, the game is playable. I have random crashes though, but very little compared to the annoying experience before all these steps, and the game is playable, with a lot of mods over it.
It is important for every NV player to save often, that is the rule. Also I'd recommend using this one http://www.nexusmods.com/newvegas/mods/45652/?, to avoid annoying rollbacks.
