List of merchant inventories/stock chance?

Does anyone know or know how to find out exactly what items different merchants stock, and what the chance is for that item appearing for sale in the merchant’s inventory? I hope I didn’t word that question too poorly. I’ve looked around but I can only ever find vague answers like “sometimes Buster stocks this item”, never complete lists and percentages.

Currently you need to check the scripts of every trader for their stock lists and restock chances. I was working on an Excel sheet of this but didn't finish it.
