First time out of the vault
The Girlfriend and I are going half and half on an xbox 360 instead of getting each other Christmas gifts this year. I always gamed on a computer and never payed attention to console games. Can anyone recommend some fun two player games? We know that we want Mortal Kombat and one of our friends will lend her FO:NV but I would also like to play something coop.

Saints Row III

And that's all that comes to mind.

You could try looking at Roosterteeth. They tend to play console Co-op games for their Let's Plays, and that might give you an idea.
 
A silly as it may sound I highly recommend LEGO titles (Star Wars or LOTR). The co-op is pretty much the way to play those games. If you have to get one, get yourself LEGO SW: Old Trilogy. It's very entertaining.

EDIT: Just to name a few more you might like: Left 4 Dead 2, Kane & Lynch, Worms 2, Crash: Mind over Mutant.

Castle Crashers
Scott Pilgrim vs. The World

Shooters:
Borderlands II
Left 4 Dead II
Portal II

The LEGO games are good for some simple platforming fun.

Forza 3 is a good racing game if you enjoy those.

I'm actually not a fan of Star Wars and Street Fighter. But I might look into some of the other Lego games, like Batman.
 
Those Lego games seem to be really suiting, my friend and his girl are addicted to those, even though he normally plays "serious" games.
 
Lego games are fun. Indiana Jones, Star Wars, etc. I also play those with my girlfriend, and it was good practice for her on a console, as she used to only pc/mac game.
 
Halo is one of your best options here. All games have split screen.

Gears of War does too.

I highly recommend you check out Trials HD
